Gluten Free Dairy Free Mac N Cheese
If you know anything about me, you know that I’m a sucker for mac-n-cheese.
It’s hands-down my favorite dinner ever, next to pizza anyway (I know, i don’t have the most sophisticated palette, but it is the yummiest. ;)).
Recently I was inspired to create a baked gluten-free, dairy-free mac and it.was.beyond.delicious. I think beyond delicious is technically what we would call epic, but don’t quote me on that.
And now…
If you really want to put a pioneer twist on this modern pioneer pie, try making your own grain-free or gluten-free pasta to use in this mac’n’cheese pie! But for modern pioneers who want to stick to the quick, easy, and simplicity of classic mac’n’cheese there are some gluten-free and grain-free pasta options to choose from!

- 1 bag of Tinkyada Pasta Joy, organic brown rice pasta (it’s soooo delish)
- 2 blocks of Daiya Jalapeno Havarti cheese (do not use pre-shredded cheese for this – it doesn’t melt the same), then grate the cheese into a delicious heaping pile 🙂
- 1/2 c raw mild cheddar goat cheese – optional, not required, just gives the flavor some depth, grate as well
- 1 c organic salted butter or vegan butter like Miyoko’s
- 1/2 cup Milkadamia unsweetened milk
- Organic olive oil
- 4 pieces of brown rice bread, toasted and cubed
Step one: Preheat oven to 350. Use olive oil to oil a 2L glass pan.
Step two: Boil the pasta for 7-8 minutes, not fully cooked. Remove from heat and drain. Then place back into saucepan it was boiled in. Keep off of heat. Stir in 2T of organic olive oil.
Step three: In a small saucepan on medium heat, melt the butter, once melted, add in milk and once well stirred, add in 1.5 blocks of the cheese and 1/4 c of the raw goat cheese (if using). Turn to low and stir often until melted.
Step four: Pour the cheese sauce mixture over the pasta, stir well to make sure the pasta is thoroughly covered.
Step five: Pour half of the pasta cheese mixture into the glass pan. Then sprinkle over the top of this 1/2 of the remaining cheese.
Step six: Pour the remaining pasta cheese mixture on top of this. Sprinkle more cheese over this, then add bread crumbs. Sprinkle any remaining cheese over the top.
Step seven: Bake for 40 minutes or until bubbling and bread crumbs are slightly golden.

Cooking Directions
Non Dairy Mac And Cheese
OVENS MAY VARY
Microwave Oven Remove overwrap. Place tray on a microwave--safe plate. Cook on high for 3 minutes. Stir. Cook on high for 1-2 more minutes. Let sit 1 minute. Serve.
Conventional Oven Preheat oven to 375°F. Remove overwrap. Place tray on a baking sheet. Bake for 35-40 minutes. Let sit 1 minute. Serve.
Toaster Oven Remove overwrap and tray. Place in an oven-safe dish. Follow conventional oven directions.
